Salmon Roe

The color of salmon eggs (roe) varies from pale yellowish-orange to dark reddish-orange. Carotenoids (antioxidant pigments) obtained from the salmon's diet give eggs their red color. In preparation for spawning, salmon deposit carotenoids in both their skin and eggs.
