Pav bhaji is an Indian fast food dish made up of a thick vegetable curry (bhaji) and a soft bread roll (pav). Its history can be traced back to Maharashtra, India.
The dish started out as a quick lunch for Mumbai textile mill employees. Pav bhaji was later served in restaurants all over town. Pav bhaji is now available in India and abroad, from street vendors to fine dining establishments.
Pav bhaji is a spiced mashed vegetable dish eaten with bread in a thick gravy. Potatoes, onions, carrots, chillies, peas, bell peppers, and tomatoes are popular ingredients in curry. The curry is typically cooked on a flat griddle (tava) and served hot by street vendors. The traditional accompaniment to the curry is a soft white bread roll, but other bread types such as chapati, roti, or brown bread may also be used.

Ingredients:
For Bhaji:
Butter- 4tbsp
Chopped Tomato- 3no
Green Peas- 1/4cup
Chopped Capsicum- 1no
Chopped Onion- 1no
Mashed Potato- 2no
Ginger & Garlic Paste- 1tsp
Kashmiri Red Chilli Powder- 1tsp
Turmeric Powder- 1/4tbsp
Pav Bhaji Masala- 1tsp
Kasturi Methi- 1tsp
Chopped Coriander Leaves- 4tbsp
Salt to taste
Lemon Juice- 1/2tbsp
Water to adjust consistency
For Pav:
Pav Roll- 8no
Butter- 4tbsp
Pav Bhaji Masala- 1/2tsp
Kashmiri Red Chilli Powder- 1/2tsp
Chopped Coriander Leaves- 4tsp
Method of Cooking:
To begin, melt 4 tablespoons butter in a large kadai and add the vegetables. Cook and mash thoroughly.
Then add 1 tsp chilli powder, 1/4 tsp turmeric, 1 tsp pav bhaji masala, 1 tsp kasturi methi and 4 tbsp coriander leaves.
Add 4tbsp of butter and add 1/4 tsp chilli powder, 1/2 tsp pav bhaji masala, 1/2 tsp kasturi methi.
Then add 4tbsp coriander leaves, 1 tsp ginger garlic paste, 1 onion and 1/2 lemon juice. sauté well.
Boil for 5 minutes, then mash to desired consistency.
Finally, serve pav bhaji, which is a combination of pav and bhaji.
