  • In a separate pan, poach the eggs to your preferred doneness.

  • While eggs are poaching, prepare the hollandaise sauce. In a small saucepan, gently heat the heavy cream until warm.

  • Slowly whisk in the grated Parmesan cheese until the mixture is smooth and creamy.
