It’s Sunday Bengali chicken curry but you need to enjoy it only on Sunday. It’s a mood lifter for me. The perfume of the spices and onion with garam masala fills the room with a happy feeling. Happiness for no apparent cause. On a Sunday, what could be the sources of happiness for a middle-class Bengali family in a suburb? What else could there be but a good regional movie on DD in the afternoon, a blockbuster movie in the evening, and a possible terrific ‘football match' with friends? Birthdays and visits from family were the most common special occasions.

Ingredients:
Marination of Chicken:
Chicken: 600gm
Coriander Powder: 1/2tbsp
Turmeric Powder: 1/3tbsp
Kashmiri Red Chilli Powder: 1/2tbsp
Mustard Oil: 4tbsp
Preparation of Chicken Curry:
Mustard Oil: 4tbsp
Potato: 4no
Cinnamon Stick: 1inch
Star Annise: 1no
Bay Leaf: 2no
Clove: 4no
Green Cardamom: 4no
Whole Kashmiri Red Chilli: 2no
Slice Onion: 2no
Salt to taste
Ginger & Garlic Paste: 2tbsp
Chopped Tomato: 2no
Coriander Powder: 1/2tbsp
Cumin Powder: 1/2tbsp
Turmeric Powder: 1/2tbsp
Kashmiri Red Chilli Powder: 1tbsp
Water as required
Yogurt: 100gm
Garam Masala: 1tbsp
Garnish:
Coriander Leaf.
Ginger Julienne.
Method of Cooking:
At first marinate the chicken with all the ingredients and keep it aside for 30minutes.
Take a kadai or pot and add mustard oil the fry all the potatoes till light golden color and keep it aside.
Add all the spices then add slice onion then add salt and sauté till the golden brown color.
Add ginger & garlic paste and cook till the ginger garlic flavor goes off.
Add chopped tomato and cook well.
Add coriander powder, cumin powder, turmeric powder, kashmiri chilli powder and cook well.
Then add fried potato and marinated chicken.
Cook the chicken without adding water.
When chicken is cooked then add water as per your gravy then add plain yogurt.
Serve with Rice or Roti.
